This Red Honey Process coffee from the Ramirez Estate is the kind of offering that reminds us why we fell in love with coffee in the first place—not just for the flavor, but for the story behind every bean.
Located in the mountain town of Jarabacoa at 1,300 meters, the Ramirez Estate is a family-run farm that’s as focused on social responsibility and environmental stewardship as it is on quality. Now in its third generation, the estate employs over 400 workers—many of whom are Haitian immigrants—who live on the farm and earn wages nearly 300% above Fair Trade standards. The Ramirez family goes beyond compensation by actively helping their Haitian workers gain legal residency, ensuring long-term stability and rights.
The land itself tells a story of transformation. Once degraded and barren from cattle grazing, the estate is now a thriving, organic-certified ecosystem. The Ramirez family has implemented progressive sustainability practices that set the bar for the industry:

Coffee cherry pulp is fermented into natural gas that helps power the facility.

Water used in processing is recycled, filtered, and returned to local systems.

Composting replaces synthetic fertilizers, helping nearby farms grow alongside them.
Their impact extends to the broader community as well. In one rural region, they funded the construction of a new school so young children wouldn’t have to walk over 15 kilometers each way to class. They’ve donated books, computers, and opened their state-of-the-art wet mill to nearby farmers—sharing tools, knowledge, and access to the global market.
As for the coffee? It’s stunning. The Red Honey process allows some fruit to remain on the bean during drying, producing a cup with both clarity and sweetness. You’ll find notes of semi-sweet chocolate, raw sugar, and fruit leather in a clean, round body with a long, pleasant finish.
