High in the mountains of Pereira, the farm of Las Nubes stands as a beacon of innovation in Colombian coffee. With its three hectares of Geisha, Wush Wush, and Pink Bourbon, this farm is where tradition and experimentation meet at 2,000 meters above sea level. I first visited Las Nubes with our roaster Hayden in the summer of 2022, captivated by its precision and the hum of its processing lab—a facility so advanced it felt like a glimpse into the future of coffee in Risaralda.
When we returned in late 2024, the farm was preparing for sale, and we had the rare chance to guide its final harvest. This time, we focused on something special: the Natural Anaerobic Wush Wush. Fermented in sealed tanks where oxygen is carefully excluded, the coffee develops vivid aromatics and depth, producing a cup that’s as bold as it is elegant.
The surrounding rainforest provides more than scenery—it sustains the biodiversity that defines Las Nubes. The resident family of howler monkeys serves as both guardians and proof of balance; where nature thrives, so does quality. That harmony carries through in the cup: notes of milk chocolate and amber honey ground the profile, while bright orange peel and a delicate pink peppercorn spice bring a striking, dynamic finish.
This Natural Anaerobic Wush Wush is a coffee that challenges convention. It’s the result of curiosity, control, and collaboration—proof of what happens when science and storytelling share the same soil.
