From the high slopes of Pereira at 2,000 meters above sea level, this Natural Bourbon from Finca Las Nubes is another result of our close collaboration with the farm’s final harvest in late 2024. When we first visited Las Nubes in the summer of 2022 with our roaster Hayden, it was clear that this was no ordinary coffee estate. With three carefully maintained hectares planted with noble varieties like Geisha, Wush Wush, Pink Bourbon, and Bourbon, and a state-of-the-art processing lab, Las Nubes was already pushing the limits of Colombian coffee innovation.
During that final harvest, we worked directly alongside the team to oversee fermentation times, monitor drying beds, and fine-tune the natural process that gives this Bourbon its complexity. The result is a coffee that balances comfort and surprise—a layered cup where the deep richness of cocoa meets the tart brightness of sour cherry, rounded by a touch of orange peel that ties everything together.
Beyond the cup, Las Nubes remains a model of biodiversity and balance. A family of howler monkeys calls the farm home, serving as both guardians and proof of the ecosystem’s health. Their presence is a reminder that when nature thrives, so does flavor.
This Natural Bourbon captures everything we love about Las Nubes: precision, experimentation, and a harmony between science and the wild. It’s a coffee that feels both classic and alive, grounded in tradition yet full of discovery—a fitting close to an unforgettable collaboration.
