ABOUT
Quince Fincas—Spanish for “Fifteen Farms”—is a vibrant expression of Huila’s smallholder coffee culture. This single-variety lot is composed entirely of Yellow Bourbon and was produced by a collective of 15 small-scale farmers working in the high-altitude municipalities of La Argentina, Salado Blanco, Palestina, Pitalito, Acevedo, and Guadalupe.

The honey process used here involves depulping the cherries and leaving a portion of the mucilage intact as the beans dry in the sun—usually on patios for 14 to 18 hours. This method offers a beautiful middle ground between washed and natural coffees, capturing enhanced sweetness and fruit complexity without the risk of overpowering fermentation. The result is a clean yet expressive cup that reflects both the care of the farmers and the natural richness of the region.

Each producer behind Quince Fincas contributes small, meticulously cultivated lots, united by variety, altitude, and a shared commitment to quality. The Yellow Bourbon variety thrives in Huila’s microclimates, and when paired with the honey process, it delivers clarity, depth, and a balance of fruit and florals that makes this coffee shine.

Grown between 1,600 and 1,900 meters, this harvest represents the 2023/24 season and is a testament to what’s possible when tradition, variety selection, and post-harvest innovation come together at origin. Quince Fincas is not just a celebration of coffee—it’s a celebration of collaboration.
