Envisioned through a collaborative effort with our esteemed partners at Azahar Coffee, the Chachagüí Natural blend stands as a testament to the unwavering dedication of three local families nestled within the enchanting landscapes of Chachagüí, Nariño, accompanied by a fourth from the neighboring Yacuanquer. Crafted with meticulous care and expertise, this blend brings together an exquisite harmony of Castillo, Caturra, and Colombia coffee varietals nurtured amidst the pristine elevations spanning from 1,900 to 2,000 meters above sea level.

Amparo Maya Guerrero, Juan Francisco Ortiz Sepulveda, and Ruby Alida Paguatian Trejos, the visionary custodians of this exceptional blend, meticulously oversee every stage of its journey from cherry to cup. The cherries, meticulously hand-picked by a dedicated team of local harvesters, undergo a discerning selection process, ensuring only the ripest specimens are chosen for the blend's creation.

Following the selection process, the cherries embark on a journey of transformation through a precise dry-fermentation process, meticulously orchestrated by Juan Francisco with the aid of specialized bags, unfolding over a span of 90 to 96 hours. This crucial phase is where the cherries undergo a metamorphosis, acquiring the distinct flavor profile that sets this blend apart.

Once the fermentation process reaches its culmination, the cherries are delicately rinsed and carefully laid out to bask in the gentle embrace of the sun's warmth. Each of the three producers brings their unique touch to the drying process, further enhancing the complexity and depth of flavors within the blend.

Amparo, with her keen eye for detail, entrusts the cherries to a parabolic dryer, where they gently sway in the breeze for an extended period of 24 days, allowing the flavors to develop and mature gracefully. In contrast, Juan Francisco's innovative spirit shines through as he employs a mechanical dryer ingeniously integrated into the very fabric of his home, ensuring a swift yet thorough drying period spanning a mere 5 days.

Meanwhile, Ruby, embracing tradition, opts for the time-honored method of patio drying, patiently overseeing her batch as it undergoes a leisurely drying process over the course of 15 days. Each method imparts its unique character to the beans, adding layers of complexity and depth to the final blend.

As the journey from cherry to cup culminates, the Chachagüí Natural blend emerges as a symphony of flavors, a testament to the unwavering dedication and passion of its custodians. With each sip, one is transported to the lush landscapes of Chachagüí and Yacuanquer, where the essence of generations of expertise and tradition is encapsulated within every fragrant cup.
