The second addition in our Paper Plane First Class series is this truly spectacular, and unique rum aged Pink Bourbon from Colombian producer Sebastián Gómez.
Grown by Sebastian Gomez at Finca La Divisa this coffee was picked following a strip ripeness criteria and hand sorted. Cherries were left to ferment inside rum barrels for 30 hours and then dried on raised beds below 95°f until ideal moisture contents was achieved. After the coffee is milled it is left inside rum barrels for 15 days. The barrels were used to age rum for 6 years.
This microlot is 100% Pink Bourbon. An Extremely rare varietal who’s origins are still under research.
