the enchanting Santa Isabel farm, nestled in the majestic mountains of the Cesar department, in the picturesque town of Medialuna. At an impressive altitude of 1800 meters, this farm is a testament to dedication and passion, producing an explosion of flavors and aromas for specialty coffee lovers.
Managed by the devoted coffee grower Luis Padilla, Santa Isabel spans 29 hectares of fertile land, home to the distinguished Caturra and Castilla varieties. Situated in Mount Perihan, the farm's red soil and high altitude impart a unique and distinctive flavor to the coffee, enriched by spectacular panoramic views. Luis, with over three decades of experience, understands the essence of exceptional coffee lies in the health of the trees and the ripeness of the cherries. He, along with his faithful mule Chocolata, tends to the farm with unwavering commitment.
Since 2017 collaborative efforts have come together to enhance the quality of Santa Isabel coffee, now celebrated worldwide for its consistency and excellence. The coffee undergoes meticulous hand-picking during harvest, followed by a floating process to ensure over 95% uniformity. The cherries are then sun-dried on African patios and beds, carefully monitored to avoid over-fermentation or overheating.
The result is a clean, rich coffee with a sumptuous flavor profile, highlighted by tropical fruit notes and the characteristic dark chocolate flavor of the region. The entire process, spanning 22 to 30 days, reflects Luis's dedication and love for his craft, bringing a piece of the beautiful province of Cesar to coffee enthusiasts around the globe.
