**Tres Cruces Coffee**
The story of Tres Cruces begins with the rich coffee-growing tradition in San Martin Jilotepeque and the surrounding 13 municipalities of Joyabaj. Since 2013, FECCEG (Federación Comercializadora de Café Especial de Guatemal) has worked closely with local producers, getting to know the unique qualities of this region's coffee. In 2021, the Joyabaj Wet Mill was established to enhance the processing of high-quality coffee. Located centrally in Joyabaj, the wet mill is equipped with the necessary resources and operates from January to April, processing around 5,000 quintals (100kg) of parchment coffee in its first year.
The process of harvesting, collecting, and selecting coffee beans is a family affair for the smallholder farmers in the community. For those without means of transportation, there are designated individuals who transport the cherries to the Joyabaj Wet Mill. At the mill, the journey of the coffee begins with a thorough washing and selection process to remove any floating beans. The cherries are then fermented with their husks for about 8 hours before being transferred to drying patios or African beds, where they dry for 8 to 10 days. This drying process is carefully monitored and managed to ensure uniformity and quality.
Tres Cruces coffee is grown at altitudes ranging from 1500m to 1900m, and it thrives in the unique conditions of Joyabaj, Quiche. The coffee is honey processed, fermented for 18 hours, and dried using solar dryers with raised beds. The beans come from a mix of Bourbon, Catuai, and Caturra varieties, all of which are Arabica species.
