Perched between the boundary of Jinotega and Matagalpa, the Las Nubes community is home to Ronald and Noelia, a devoted couple whose coffee farm thrives under the natural cooling effects of low-lying clouds. This unique microclimate slows the maturation of the coffee cherries, allowing the beans to absorb more sugars and develop deep, layered flavors. Their farm, lovingly tended, produces Yellow and Red Catuai, as well as a small but significant amount of Ethiosar, a hybrid known for its resilience and exceptional quality.
Ronald and Noelia’s dedication to their farm and family goes beyond the typical challenges of coffee cultivation. Ronald’s commitment to protecting their crops is evident in his willingness to sleep among the coffee trees during the harvest season to deter thieves, ensuring that the fruits of their labor remain untouched. Meanwhile, Noelia begins her day before dawn, waking at 2:30 AM to prepare meals for the workers, all while caring for their 12 children. Their daily routine is a testament to their resilience, hard work, and deep-rooted connection to the land they cultivate.
