Kindeng Mill is located in the Western Highlands of Papua New Guinea, a region defined by steep terrain, dense vegetation, and deeply rooted smallholder farming traditions. Coffee here is grown almost entirely by families working one to two hectare garden plots, often alongside subsistence crops. The Kindeng Mill sources cherries from nearly 1,500 smallholder producers across the surrounding highlands, bringing together an extraordinary range of microclimates, elevations, and varietal plantings into a single, carefully managed lot.

Papua New Guinea’s coffee history is closely tied to these smallholder systems. Rather than large estates, most production comes from backyard gardens where coffee trees grow under native shade, nourished by rich volcanic soils and frequent rainfall. Varieties such as Arusha, Bourbon, and Typica are common, often planted decades ago and maintained through generational knowledge rather than intensive inputs.

Naturally processed coffees remain relatively uncommon in Papua New Guinea due to climate challenges and infrastructure limitations, which makes this lot from Kindeng Mill especially notable. Cherries are selectively purchased at peak ripeness, then dried slowly over three to four weeks on raised beds and canvases. During this time, the coffee is turned frequently to ensure even drying and to prevent defects, allowing sugars from the fruit to fully integrate into the seed. The extended drying period demands patience and precision, but it results in a deeper, more expressive cup than washed coffees from the region typically display.

In the cup, this coffee offers warmth and structure rather than sharp intensity. Cooked cranberry brings a gentle, wine like fruit character, supported by soft baking spice and clove. A mellow chocolate base anchors the profile, creating a comforting and cohesive finish. The sweetness feels rounded and integrated, with a subtle boozy quality that reflects the natural process without tipping into excess.
